We only use whole organic cardamom and the finest organic saffron, which we grind fresh, to create the distinct taste. The saffron is dissolved in organic hay milk the day before and infused overnight before being incorporated into our organic brioche dough. The dough matures for a total of 48 hours - first 24 hours and then another 24 hours after knotting - so that the fragrant, floral saffron aroma can fully develop. After the first maturing period, the dough is filled with our homemade cardamom butter cream, which we make from the best organic butter and freshly ground cardamom. We roll the bullar by hand in the traditional Scandinavian way to give them their characteristic shape and the perfect bite. A strong cardamom syrup and a topping of organic sugar and cardamom round off the taste experience - spicy, sweet and wonderfully soft.
